La Favorita recommends… Roast Chicken with Potatoes and Mushrooms 👇
Ingredients to serve 4: 1 kg chicken, 2 potatoes, ½ onion, 50 g La Favorita Fish Dried Porcini Mushrooms, 300 g peeled plum tomatoes, 1/2 glass red wine, basil, salt, chilli pepper.
1️⃣ Soften the porcini mushrooms in warm water for 20 minutes.
2️⃣ Meanwhile, peel and chop the potatoes, then mix them in a bowl with sliced onion, basil, and chilli pepper.
3️⃣ Rinse and squeeze the mushrooms, add them to the bowl with the tomatoes, and salt to taste. Mix and transfer to an oven dish.
4️⃣ Add the chicken pieces and bake at 200°C, placing a water dish at the bottom of the oven, for 1 hour.
5️⃣ Halfway through, turn the chicken and pour red wine over it. Continue cooking.
6️⃣ Remove from the oven and serve.
